I love it when I can combine several favourite foods into one, call it a dip, and have my kids think it’s some sort of treaty junk food. This version was made for a deck building party at my sister’s where I figured some snacky, yet energy boosting food might come in handy. We served this with a combination of pita chips, torilla chips and rice/adzuki bean chips. Very yummy!
1 19 oz can of refried black beans (or homemade refried black beans, I was just being lazy)
2 ripe avacados
2 cloves garlic
1 Tbsp lime juice
Sea Salt and Pepper to taste
1/2 cup chipotle salsa (or whatever your favourite is)
3/4 cup plain yogurt
3/4 cup shredded cheese (cheddar, monterey Jack, mozza or a mix)
2. In a medium bowl, mash together avacado, garlic (crushed or finely chopped, as long as it’s fresh), lime juice, salt, and pepper. Layer over black beans.
3. Layer salsa, then yogurt, then cheese. If you want, a layer of fresh chopped tomato, red or white onion and peppers is nice after the yogurt.
4. Serve cold. Can be made ahead up to a day before serving; store in fridge.
