I love salsa. More to the point, I love chopping up random ingredients, tossing them with some citrus and spice and calling it salsa. As long as you have onion, garlic, some sort of citrus juice and a little seasoning, you can add anything else you like and it will almost always be good…almost. I did make a grapefruit salsa a few months ago that was pure disaster. Let’s not talk about that.
This combination of nectarine, avocado, orange tomato, red pepper, cilantro and cinnamon is my new favourite. Of course, nectarines and avocados are quite possibly my two favourite things in the world (you know, aside from people I love…blah, blah, blah), so I’m definitely partial to any recipe that uses both. I have made it a few times now and I have come to realize that this is really only worth making when your ingredients are ripe and in season. If you can’t find any sweet, delicious nectarines, look for a substitute. I think peaches, plums or mango would work fine.
You can serve this simply with tortilla chips or use it to top a pork chop, chicken breast, halibut…whatever you’re in the mood for! I wouldn’t make this any more than 24 hours ahead of time. If you do make it ahead, make sure the lime juice is on there and store in the fridge in a sealed container.
2 ripe nectarines, pitted and diced
1 avocado, pitted and diced (you could use 1 1/2 avocados if you want it creamier)
1/3 large red onion, finely chopped
4 cloves garlic, finely chopped
1 red pepper, finely chopped
1 large orange tomato, diced
1/2 bunch cilantro, chopped (include some stem, it’s flavour-packed!)
1/2 jalapeño, finely chopped (less if you’re feeding children)
1 lime, juiced
1 tsp cinnamon
1 tsp coarse kosher salt
pinch freshly ground black or white pepper
Throw the nectarines through jalapeño in a bowl. Add half the lime juice and seasoning. Toss. Taste (preferably on a tortilla chip) and add lime juice, cinnamon, salt and pepper as desired. I like to taste the sweetness of the nectarines and the creaminess of the avocado first, followed by the tart lime juice, then the salt and cinnamon and finally a kick of jalapeño. At this point, you could add more of any ingredient (onion, pepper, avocado, etc.) to suit your taste/application.
