Sausage, Spinach and Chickpea Fry February 22, 2011

This recipe comes from Everybody Likes Sandwiches: http://everybodylikessandwiches.com/2010/03/teaching-my-dad-to-cook-fried-chickpeas-with-kale-sausage/.  One night I was hassling my husband to take me out for dinner and by the time he’d waffled enough about where to go and should we even go, I’d thrown this deliciousness together.

What you need:

1 onion, 2 cloves garlic, olive oil, 1 can of chickpeas, 2-3 uncooked Italian sausages (I used Spolumbo Chicken Apple), bunch of spinach and some white wine (or beer would work too), Parmesan.

Chop onion and garlic and sauté a bit in some olive oil.

Rinse and add chickpeas – cook for about 10 min.

Chickpeas

Chop sausage into bite-sized chunks and add to pan.  Cook until done through.

Sausage

Add a lot of spinach and a little white wine to keep the juices flowing.  Cook down until spinach is wilty.

Spinach & wine

Throw into a bowl and top with parmesan.

Good to go
